“I intend to have my own culinary school and get recognized for my craft” – Culinary Instructor, Chef Dera.
Tell us a bit about yourself, your personality, and your background.
My name is Onuorah Chidera Juliet. I am from Anambra state. I am popularly known as Chef Dera. I did my tertiary education at Nnamdi Azikiwe University, where I studied library and information science. I did my culinary studies at the School of Culinary And Finishing Arts in Dubai.
In few words, tell us what you do.
I am a culinary instructor. I offer services like private dining, catering, and private teaching. I am also the CEO of MealsbyDera. We cook freshly made food and deliver to your doorstep.
What were the steps, how did this interest start?
I used to compete with my brother to be in the kitchen; we took turns making food for the family. I enjoyed seeing people’s expressions when they ate my food, and I still do. After NYSC, I got a job at SCAFA, Dubai. At first, I was just working in the institute, but I realized I could take the opportunity and do more. So, I began working and schooling. I got recognized for my training skill, and SCAFA employed me to teach the kids cooking sessions. That was the start.
What has been the most difficult moment for you as a Culinary Instructor?
It has been three years as a culinary instructor. I would say the most difficult moment were times that I had to improvise because some of the ingredients and equipment I was used to weren’t available in my place of assignment in Nigeria. It was really tasking for me.
What do you consider the best moment for you?
That would be when I represented Nigeria in an international competition in UAE, and I came top. It meant so much because I had trouble deciding want to make and wasn’t even sure. I ended up making fried plantain and fish sauce, and the feedback was amazing. I felt on top of the world.
What would you rather do if you weren’t a Culinary Instructor?
I would rather be a librarian. I love reading and doing research.
What is your long-term vision as a Culinary Instructor?
I intend to have my culinary school and get recognized for my craft. I want a culinary institution that feels like home. I would also have a restaurant where people can eat well at an affordable rate.
If you were the Head of the Culinary Institute around the world, what is that one food you would make compulsory?
Creamy mashed potatoes with steak and sauteed veggies.
What is your best dessert?
Motten Lava with Panna Cotta and Strawberry Mosse.

I make people around me happy, and I love hanging out. Most of my students think I am not a fun person, but I am the life of the party.
