Nigerian Pancakes Recipe
I remember the first time I had pancakes as a child and often yearn for more as a snack and it was love at first sight. This lock down has made me crave all sorts and then I started missing my sisters pancakes (lol). Why am I calling it ‘Nigerian Pancake’? Because the other type which is Americana is fluffy and I don’t like fluffy pancakes.

Below are the measurements I used and It gave me 4 medium/large sized pancakes but should be able to serve at least 5/6 small sized pancakes.
Here is what you will need:
Ingredients Oil of your choice Two (2) Eggs 1 cup of milk ¼ cup of Granulated sugar Pinch of salt 2 cups of plain flour 1 teaspoon baking powder (not compulsory) 3 table spoons melted butter Nutmeg (optional) Cooking oil |
