Hi there and hope you are having a lovely Sallah break. This is the kick off of a new series and we have teamed up with LivinginLekki.com to feature some Chefs in the city of Lagos #ChefsinTheCity
We had an exclusive session with Chef Nkesi of HSE Café (which just opened yesterday) as she invited us to have a glimpse of her life in her kitchen by preparing a nice simple lunch for us giving us a taste and an idea of what HSE Café will be before the formal opening which happened yesterday, Monday the 12th of September 2016.
HSE Café by the way is such a cute little space which was well thought out in terms of aesthetics, simplicity and ambience. I definitely see this place to be definitely perfect for dates & chill outs at least between the hours of 8am and 6pm as HSE Café will be strictly serving Breakfast and Lunch and no late hours which is a first. The Café is not the usual dining you’d normally have in Lagos where rules and certain types of menu’s are adhered to but a mix of everything and anything.

Starter: Pumpkin Soup with Pancetta (pronounced Panchetta)
This was a first for me and what I liked most about it was the Asian infusion in the soup, it wasn’t bland and had that right blend of spicy and tingle that made a huge difference for a simple soup. Was perfect for the rainy day too
Lunch: Mushroom & Cherry Tomato Pasta with Lean Steak
She actually made the Pasta from scratch which was so cool and fresh too. Never realised how making pasta could be so simple and easy.
How did she do it?
First step: Have some flour, eggs and olive oil mixed together lightly – this can be done with a food processor. Second step: Knead the pasta dough and allow it to set in the fridge for a little. Step three: After a few minutes, use a rolling pin to flatten the pasta as best as you can and insert into pasta maker to make it much much flatter and thinner and then cut into any shape and size and you have your pasta!
According to Chef Nkesi, fresh pasta is easy and very fast to cook and our pasta was floating after some time and voila it was ready! Take a look at the video below for steps as well
