Recipe: How to Make Creamy Chicken Pesto Pasta with Mushrooms and Prawns

Anyways, Pesto Pasta is one of those meals I’d order when eating out but never tried my hands on making my own and this was an opportunity. This is one of the top meals to make at home since Restaurants in Lagos are not opened for you to get your Pesto Pasta fix. I therefore present to you how I made my Creamy Chicken Pesto Pasta and it was delicious!
Let’s get into it shall we?
Before I go ahead, I used store bought Pesto and did not bother to make mine but there are tons of recipes online for you to make your Pesto – it’s quite easy too.
Creamy Chicken Pesto Pasta Sauce | |
| 1 seasoning cube Pesto sauce (store bought/freshly made) Cooking cream Greek Yogurt (not compulsory) ¾ cloves of Garlic Paprika ½ cup of Parmesan Cheese (grated) Sliced red bell pepper | Any pasta of choice. I used Spaghetti Spinach Sliced Mushrooms Prawns ½ medium onion, sliced Thinly cut chicken pieces Sliced chilli peppers |

Instructions
- Start out by pouring some olive oil in your deep pan and sprinkle your seasoning cube in it to season your oil
- Add in your onions, garlic and peppers and fry for 2-3 minutes
- Pour in your diced chicken pieces and stir fry till its medium done
- Add in your spinach and mushrooms and prawns and stir fry for a little
- Check for taste and add salt and extra seasoning as necessary and suitable to your taste
- Now add in some pesto be it store bought or home made. I used the whole jar (lol) but a cup should be fine. Now stir and cook with the rest of the items in your pan for another 4 minutes
- Again, taste and adjust as necessary to suit your taste buds be it wanting it more spicy or tasty. It is important that this tastes really good before adding next step
- Now that you are fine with the taste, add in your grated parmesan cheese, pour in your cooking cream/unsweetened Greek yogurt or a mix of both for that extra creamy feel
- Now stir and stir and reduce gas heat and let it simmer for some minutes on low heat
- Boil up your pasta in another pot al dente of course and once its ready, rinse the starch off and allow to drain in a colander/strainer
- Now pour in your strained pasta into your creamy chicken pesto sauce and let it simmer on low heat for another 5 minutes.
- Dish out your home made delicious Creamy chicken pesto pasta and eat. Enjoy over a glass of wine or some really chilled malt based drink. You can sprinkle some grated parmesan cheese on top too and voila!
As I was typing this up, I was just smiling. Cooking this creamy chicken pesto pasta was the perfect release I did not know I needed from all the funk online.
